Stir fry rainbow veggies

This simple stir fry veggie is lipsmacking at the same time healthy and best of all you can include or exclude any vegetables of your choice or whatever is handy!!!

2 tbs finely chopped garlic
1 diced onion
1 cup broccoli florets
1/2 cup red bell pepper
1/2 cup yellow bell pepper
1/2 cup  orange bell pepper
1/2 cup mushrooms
1/2 cup cauliflower florets
1/2 cup scallion
1/2 cup french green beans
1/2 cup baby corn
1/2 cup tofu (optional)
Salt, black  pepper per taste
Red pepper flakes optional

1. Cut all veggies in wedges

2. Saute garlic in 2 tsp oil, let it cook until it turns little brown.

3. Add all the veggies, except scallions, let it cook until it becomes little tender, but don't overcook or else it won't be as crunchy as it should be.

4. Add seasonings of your choice salt, black pepper and red pepper flakes.

5. Ready to serve and dig in with your favourite chilli sauce!!!
